The wild American Paddlefish, also known as spoonbill, comes from the Mississippi River Basin where they have inhabited the area for over 65 million years. This small platinum bead has a briny, slight mineraly finish, and a smooth pop. The bold and assertive flavor of the Paddlefish makes it the perfect accompaniment to smoked fish, fresh burrata, brut rosé, and vodka martinis.

The hardest sturgeon to farm, the classic White Sturgeon has a clean, light, and complex flavor. Ranging in color from black to golden brown, these medium-sized eggs have a perfectly balanced salinity, with a nutty, buttery flavor and smooth pop. Desired for its addicting creamy characteristics, White Sturgeon pairs deliciously with everything from foie gras to braised abalone and chocolate mousse.

Hailing from Denmark, the vibrant, medium-sized Trout Roe pearls deliver a hint of sweetness, full pop, and a fresh finish. Because of its approachability and versatility, this roe is a great addition to any appetizer or salad, and can even stand up to any grilled or smoked fish.
